Ingredients:
Small red potatoes
A little sweet onion, sliced
A little fennel bulb, sliced (optional)
Fresh Basil, torn or sliced
A good size drizzle of very good quality Olive Oil
A splash or two of apple Cider Vinegar
Pink salt and fresh ground pepper to taste
Instructions:
Boil potatoes until just soft. Drain, cool and place in refrigerator over night, cut into chunks.
Toss potatoes with all other ingredients
Let sit for an hour or so for flavors to meld. Stir occasionally.
